So, I love my children. I feel like that should be stated before I go into the next sentence. Because when dinner time hits, they are the absolute worst. They will eat NOTHING and its become a real problem. I find myself really dreading 6pm because a family fight is inevitable. I keep thinking…oh, it’s going to get better. But then it doesn’t. They can’t be vegetarians that hate vegetables forever, right?
Well, the internet proved helpful this weekend! I found a recipe for chocolate muffins with hidden veggies! I didn’t think they would be tasty and I was confident they wouldn’t work…BUT THEY DID! Both kiddos tore up two each! They had no idea they were stuffed with hidden goodness! Plus they were SO easy to make! We just might have to have these on hand for every meal! 🙂
Veggie Puree Ingredients:
- 1 Zucchini
- 1 Banana
- Handful of Spinach
- Water
Muffin Ingredients:
- 1 cup of Veggie Puree
- 1/4 cup Vegetable Oil
- 1 large egg
- 1/2 cup sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup cocoa powder
- 1/2 cup chocolate chips
Step-By-Step
- For the veggie puree, the original poster mentions that you can chose a combo of sweet potatoes, spinach, zucchini, banana, or apples. I chose zucchini, banana, and spinach. To make the puree, I first chopped the zucchini and tossed it in a pan covered with water. I cooked until it was soft (roughly 5 minutes). And then pour it into a blender with the banana and spinach. I pulsed until it was fairly smooth! This made 2 cups of a puree so I doubled the recipe but you could freeze the other half for later!
- Combine the oil, egg, and sugar (I used a standing mixer).
- Add one cup of the pureed veggies and stir.
- Toss in the flour, baking powder, salt, cocoa powder, and chocolate chips. Stir until it’s all combined!
- Scoop into a greased muffin pan.
- Bake at 400 degrees (F) for 15 minutes.
- Remove, let cool, and enjoy! We added a little cream cheese to the final product and good gracious…tasty!
