Well, the last week of established meal plans from the Galveston Diet book is done! I have to admit, I lost a lot of steam in the last week. I ate very few of the snacks and I wasn’t as excited about some of the meals this week as I had been in the past. Everything I ate remained delicious…but I just wasn’t looking forward to cooking them in addition to the meals I had to cook to feed my children. I think if I had done this four week meal plan at a less busy time for our family, I would have approached it with a little more gusto!

The busy week showed itself not just in my enthusiasm but in my scheduling…yet again. I pushed my dinners to way too late and that made me opt out of exercising almost every evening. Which isn’t sustainable and that left me discouraged.

But alas, I have a plan!

So I love the results I have seen from implementing the Galveston Diet ideals into my daily life. I love seeing lower numbers on the scale and fewer inches on my waist. I lost 8 pounds and four inches over the span of four weeks! But further, I love feeling less bloated, inflamed, and uncomfortable. I’m sleeping better and have more energy during the day. I haven’t had a hot flash in a minute! The 16:8 fasting window was an easy transition and refocusing my macros to more healthy fats, proteins, and unrefined carbohydrates has been the missing key for me. All in all, I’m a big fan…I just have to figure out how to make these habits more sustainable.

This week, I’ve created my own meal plan with the Galveston Diet recipes that fit better in our schedule. So meals with a longer prep time are planned for evenings I have more time. To ensure I’m pairing the right meals together to hit my macro goals, I’m tracking everything with the Cronometer app, which has Galveston Diet settings.

Even with me customizing these meals, this isn’t really solving my problem of cooking two meals every evening. So, I signed up for the Factor meal delivery. I’ve heard great things about them and adjusted my selections to Keto, which is the closet to the Galveston Diet. I have ten meals showing up next week and I’m really, really hoping that this works out because I’m very intrigued by not having to spend my evenings cooking multiple meals, buying double the groceries, and spending my evenings cleaning the kitchen. So…fingers crossed!
