This was a very, very busy week. Typically, during busy weeks, I revert to very unhealthy habits…such as treating myself to sugary snacks or drinks – such as delicious hard seltzers. However, I was determined to not do so this week. As much as I wanted to cheat, I stuck to the plan. I just kept reminding myself of the long-term goals and not the short-term fixes.

My scheduling was still a bit off. There were days my fasting window was more of 18-20 hours instead of 16, which made getting all the meals/snacks in difficult. Those days I tended to think about my inability to stick to the fasting plan and internally fuss myself until I could get back on track. I didn’t love those mental gymnastics so I’m working on giving myself a little more grace in Week 3.

Because the week was busy, I was very, very tempted to skip my meal and just eat whatever the kids were eating. Cooking two dinners each evening has been a lot. However, Week 2 meals have been DELICIOUS and much more appetizing than whatever the kids are eating so that helped me power through. I stumbled upon the Galveston Diet website and noticed they recently introduced a meal-delivery service and I am really thinking about that option. Once I’m through the four week plan, that might be a great solution for me during our busy time. We’ll see!

Even with all these hiccups, I saw results in Week 2 as well! Though it can’t really be quantified, I do feel like I had more energy and less brain-fog in Week 2 and thank goodness for that! I also noticed an improvement in my skin with a little more glow but more specifically some relief in my recent eczema flair. I think this is a result from the anti-inflammatory foods! In addition to all of that good news, I’m also two more pounds down and another inch down in the waist! SO that is a total of FOUR pounds and TWO inches! I’ll take it all! 😉

Looking into Week 3, I’m excited about the recipes for the meals and snacks. They look delicious! I’m also going to work on incorporating more exercising/movement and drinking more water!
