We have been vegetarian for roughly 13 years. However, there are a few things I can still taste when I think about them. And one of those is a Taco Bell Mexican Pizza. In high school and college, I essentially lived off of these things. Absolutely delicious. I’ve tried several copycat recipes without success and while the following one isn’t exactly…it’s the closest I’ve come and I’ve tweaked it to be vegetarian. Enjoy!
Ingredients
- 4 Beyond Beef Hamburger Patties (or 1lb of any meat substitute)
- Taco Seasoning
- 8 small flour tortillas
- 3 tablespoons of oil (I used vegetable oil)
- 1 can of refried beans
- 1/2 cup of a mild salsa (chunky is best)
- 1 can of red enchilada sauce
- 2 cups of shredded Mexican cheese
- 2 Roma tomatoes (chopped)
- Shredded Lettuce
- Sliced Green Onions
- Sour Cream
Instructions
- First, prepare your meat substitute. We love Beyond Beef Hamburgers so we always have a frozen bag on hand. I let them thaw and then sautéed them with sprinkles of taco seasoning. I did use a potato masher to really break them down to mimic ground beef. Once done, just set aside.
- Heat your oil in a fry pan over medium/high heat. Fry each tortilla until lightly browned and crisped. This really only takes a few seconds on each side. I used tongs to place, flip, and remove them. Then I placed them over paper towels to cool. I really think frying the tortillas made ALL the difference with this recipe. Easy and delicious!
- Now, you are going to assemble your pizzas! Place your bottom tortilla on a baking sheet and then top with refried beans spread to the edge. Next up is the taco “meat” and a spoonful of salsa. You’ll then place your second tortilla on top and coat with enchilada sauce, cheese, tomatoes, and a little more cheese!
- Bake for 5-7 minutes at 350 degrees. You really just want to heat and melt the cheese. Remove from the oven and top with the shredded lettuce, green onions, and sour cream.
